Applied Research Specialist (Savory Ingredients)
Main functions
The Applied Research Specialist works within a team that provides and develops applications-related know-how; manages product development projects and product recipes; offers technical support for production, quality, sales and supply chain teams and works closely with the Product Managers. The key activities for this position include: management of product development and application related projects and supporting customers focusing on the European and Asian regions in the savory food market. This position reports to the Applied R&D Manager Europe based at the Competence Centre of Food and Fermentation Technologies in Tallinn, Estonia.
The selected individual will be responsible for (as assigned), but not limited to:
- Managing application-related projects with the focus area of savory market requirements. As an example: studying application performance of our products to support our customers and exploring novel application areas;
- Supporting projects and team work with general Lallemand Bio-Ingredients Process R&D team and local Estonian Applied R&D team;
- Short term product development projects: finding solutions for specific customer demands. Carrying out the projects from evaluating the sample, designing the recipes and trials in order to create new products as well as guiding the industrialization and commercialization of the successful developments;
- Replying to customers’ questions regarding the use of our products or other technical inquiries;
- Supporting other teams (quality, production, supply chain) with applications and formulations related inquiries (application related complaints, new raw materials evaluations, …);
- Working with the production plants, especially Salutaguse Pärmitehas AS (Tallinn, Estonia) and De Danske Gaerfabrikker (Grenaa, Denmark) on implementing new products or to offer technical support;
- Attending customer visits if specific application know-how is requested or relevant for ongoing projects;
- Supporting our presence in food trade shows and seminars for our distributors and customers.
Technical skills
Required- Possess a MSc degree in food science / food technology, (food) biotechnology or similar;
- Have experience in working in a laboratory;
- Have an interest and experience in sensory evaluation;
- Confident user of MS Office tools;
- Excellent oral and written communication skills in English.
- Technical experience in food industry (e.g. as product developer).

Required- Good troubleshooting and problem solving skills;
- Solid organizational and time management skills;
- Desire to take independent project management responsibilities;
- Desire to work as part of a team in a fast-paced development setting;
- Willingness to work in an international atmosphere and with different cultures;
