Intégré(e) à l’équipe R&D, l’étudiant participera au développement des procédés de production de ferments à applications fromagères ou de salaisonneries. Les principales missions seront :
la veille technologique et bibliographique en lien avec le sujet de stage.
la participation à la définition et la planification des plans d’expérience.
la mise en œuvre et le suivi des expérimentations (fermentation à l’échelle laboratoire, concentration de la biomasse, congélation, lyophilisation).
la participation au transfert à l’échelle pilote (selon avancement du projet)
l’analyse, synthèse et interprétation des résultats.
la rédaction de rapports et réalisation de présentations pour rendre compte de l’avancement du projet.
la participation au bon fonctionnement du laboratoire.
